I’m Thinking Vegan was inspired by an increased awareness of health. The idea came to Ashli approximately 20 years ago as she was influenced by a desire to follow a healthier, dietary regimen. At the age of 12, Ashli stopped eating red meat and followed a primarily pescatarian diet with minimal dairy products, which she consumed on occasion. Ashli took an interest in health and began educating herself about different foods, fruits, minerals, and vegetables as well as researching the ingredients in foods. In addition to Ashli’s increased awareness of overall health, she began to exercise regularly which complimented her dietary regimen and lost 40 lbs.!
At an early age, Sean, was always active and played sports recreationally. At the age of 16, he took a physical education class which introduced him to the gym/weight-room. As his interest increased, and results of exercising began to show physically, Sean committed to exercising regularly which would include weightlifting, jogging, spin classes, and bike-rides on the local trails. Exercise has been an important and consistent part of Sean’s life which he continues to promote to this day. At 38 years of age, Sean’s cholesterol elevated, but in lieu of medication he discovered a vegan (plant-based) regimen aided in reducing his cholesterol significantly and is now normal.
In 2019, Sean and Ashli decided to eliminate meat and dairy products and began to follow a vegan (plant-based) lifestyle. They have also introduced their children to veganism and regularly discover and try foods and desserts from various, businesses, cultures, and states that they all enjoy. The family also gardens and have started to grow some of their own food. Sean and Ashli are not doctors however, they have decided to commit to a vegan (plant-based) lifestyle and want to share their journey with others with the hope that others will benefit from a healthier lifestyle not dependent on unnatural alternatives.
